Disodium 5-Ribonucleotide is a 1:1 mixture of IMP and GMP with the following characteristics:
• Composition: Equimolar Disodium Inosinate & Disodium Guanylate
• Appearance: White to cream-colored powder, odorless
• Solubility: Soluble in water; slight solubility in ethanol & ether
• Stability: Chemically stable; strong synergistic umami with MSG
• pH Value: 7.0–8.5 (5% solution)
