L-Ascorbic Acid (C₆H₈O₆) is a potent water-soluble antioxidant and enzyme cofactor.

• Solubility: 333 g/L in water at 20 °C; slight in ethanol
• Stability: stable dry; aqueous solutions oxidize rapidly
• Melting Point: 190–192 °C
• pH: 1.0–2.5 in 176 g/L solution
